Pork and Mash Gratin
Ingredients
- 2.5 lbs potatoes, chopped
- 2 x 12 oz pieces pork tenderloin
- 4 sprigs of fresh sage
- 3 oz cheddar cheese
- 6-8 slices of prosciutto
- 2 tablespoon olive oil
- salt and black pepper to taste
Instructions
- Preheat broiler on high.
- Prepare vegetables: wash potatoes (don't peel) and chop into 1.25-inch chunks. Grate the cheese into a bowl.
- Cook potatoes in a large pan of boiling salted water with the lid on for 12 minutes, or until tender.
- Put a shallow casserole pan on a high heat.
- Season the pork with salt and black pepper, then place in the pan with 3 tablespoons of olive oil and sear for 3 minutes, turning regularly while you pick the sage leaves.
- Remove the pork to a plate and toss the sage leaves into the fat in the pan for just 5 seconds, then scoop onto a plate, leaving the pan off the heat to use again.
- Drain the potatoes, tip into the casserole pan, and add half the grated cheese.
- Add 2 tablespoons olive oil and mash well, loosening with a splash of water if needed.
- Taste, season to perfection, and spread out to the edges.
- Add the remaining cheese, sit the pork on top, then gratinate under the broiler for 13 minutes.
- Lay the prosciutto around the pork in waves and sprinkle over the crispy sage, then broil for 2 more minutes, or until the pork is cooked to your liking.
- Rest for 2 minutes, then slice the pork and dish up.
