Penne Arrabiata
Ingredients
- 1/2 tsp crushed fennel seeds
- 2 tbsp seasoning mix
- 12oz package ground beef or impossible meat
- 1 tbsp red wine vinegar
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 tsp red chili flakes
- 1/2 cup dry white wine
- 30 oz can crushed tomatoes
- 1.5 lb penne pasta
- 4 tbsp olive oil
- 1 tsp salt - more to taste
- black pepper to taste
- Parmesan cheese, grated for serving
- 1/2 cup parseley leaves
Instructions
Well in advance:
- Prep: crush fennel seeds.
- Combine and mix in mixing bowl: meat, seasoning mix, crushed fennel seeds, vinegar.
- Cover with aluminum foil and let marinate in the fridge.
Before meal:
- Brown the marinated meat in a large pan over med-high heat with 2 tbsp olive oil, ~2 min on each side, then return it to the bowl.
- Saute the onion with garlic and chili flakes in the other 2 tbsp olive oil for ~4 min.
- Add white wine, leave uncovered to reduce until nearly dry.
- Add tomatoes, simmer covered for 20 minutes.
- Boil salted water and cook the pasta ~10 minutes until al dente.
- Add salt and meat mixture to the sauce, season to taste with salt & pepper.
- Mix in the cooked pasta.
Serve with the chopped parseley as a garnish, and grated parmesan.
