Clarified New York Sour

Ingredients

(makes 2 drinks)

  • 4oz rye or bourbon whiskey
  • 2oz simple syrup
  • 2oz lemon juice
  • 4 dashes bitters
  • 2oz whole milk
  • 1oz red wine

Process

Ahead of time:

We'll mix with milk - which will start curdling immediately. The milk curdles will generate a filter for impurities in the cocktail.

At first, the curdles will not yet have settled to the bottom of the coffee filter, so we'll re-house the filter in a new vessel after 2 minutes and re-strain the initial cloudy cocktail.

  1. Combine whiskey, simple syrup, lemon juice, and bitters in a vessel.
  2. Pour this mixture over the milk in another vessel.
  3. Let sit to settle for ~30 minutes.
  4. Begin straining into another vessel through a coffee filter (in a funnel).
  5. After 2 minutes of straining, transfer funnel and filter to another vessel and pour the initial cloudy output back into the filter.
  6. Let sit to fully strain, may take around 2 hours.

The result of this part of the process is shelf-stable and you can store it in the refrigerator.

Serving:

  1. Pour the stored drink into a mixing glass and stir with ice.
  2. Strain over a large rock in each of 2 glasses.
  3. Gently float 1/2 oz of red wine on top of each drink.
